Steak Doneness
When cooking or ordering a steak, a critical question that needs to be answered is how you want your steak done. The doneness or temperature of one's steak affects the texture, flavor and juiciness of the meat. To determine what temperature to cook your steak to is entirely based on preference. There is rare, medium-rare, medium, medium-well and well-done.
Before you start cooking your steak it is important to bring your defrosted steak to room temperature. This ensures that the steak will cook evenly, see how to properly defrost your steak here. After that use the Golden Steer Steak Company temperature guide to achieve your desired doneness, we recommend medium-rare! The best way to ensure a steak is cooked to the perfect temperature is with a meat thermometer.
Letting Your Steak Rest
After your steak has reached the desired temperature and you take it off the heat it is important to let the steak rest. Letting the steak rest allows the juices to redistribute for the juiciest steak possible. Be aware that the steak may increase 5° while it is resting. Right before you're about to eat, add our famous Maitre d’ Butter and Au Jus then serve.
