Here's what you'll need:
Ingredients:
- 1 whole chicken (about 3-4 pounds)
- 1 tablespoon De Jonghe Seasoning
- 1 tablespoon French Cuffs Seasoning
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup chopped fresh herbs (such as rosemary, thyme, and parsley)
- Sergio's Seasoning, to taste
Directions:
- Preheat oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- In a small bowl, combine the De Jonghe Seasoning and French Cuffs Seasoning, olive oil, herbs, and Sergio's Seasoning to taste.
- Rub the seasoning mixture all over the chicken, making sure to get inside the cavity.
- Place the chicken in a roasting pan. Pour the chicken broth into the bottom of the pan.
- Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
