Are you in the mood for an indulgent and delicious side dish? Look no further than these twice-baked potatoes with a luxurious buttery lobster topping. This dish is the perfect accompaniment for a fancy steak dinner at home or your next special gathering.
Baked potatoes are a steakhouse staple, and this recipe brings the taste of the Steer into your home with our house made compound Maitre d’ Butter and Sergio’s Seasoning for that Vegas spin. Add lobster as a finish, and this dish is unlike any you’ve had before!
Here’s how you can make this simple yet delectable side for your own table:
Ingredients:
- 4 large baking potatoes
- 4 tablespoons Maitre d’ Butter
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded parmesan or cheddar cheese
- Sergio’s Seasoning (to taste)
- 2 lobster tails, cooked and chopped (see this post for methods)
- 2 tablespoons chopped fresh chives or green onions
- 1 tablespoon fresh lemon juice
- Extra virgin olive oil (for potato coating)
Directions:
- Preheat the oven to 400°F.
- Rinse and dry the potatoes, then pierce with a fork several times.
- Coat each potato with olive oil, sprinkle with Sergio’s Seasoning, and place them directly on the oven rack. Bake for 1 hour or until tender.
- Once the potatoes are cool enough to handle, cut each one in half lengthwise. Using a spoon, carefully scoop out the flesh and place it in a large mixing bowl, leaving a thin layer of potato inside the skin.
- Add the heavy cream, sour cream, shredded cheese, Sergio’s Seasoning (to taste), and half of the Maitre d’ Butter to the mixing bowl with the potato flesh. Using an electric mixer or a potato masher, mix all the ingredients until they are smooth and well combined.
- Spoon the mixture back into the potato skins, top with more cheese, and place them on a baking sheet.
- Bake the stuffed potatoes for another 15 to 20 minutes, or until they are golden brown on top.
- While the potatoes are baking, prepare the lobster topping. Bring 2 tablespoons of Maitre d’ Butter to boil in a skillet and add the cooked lobster and fresh lemon juice. Stir well and allow to cook for 2 to 3 minutes.
- Add the cooked lobster to a bowl with the green onions or chives and mix well.
- Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes.
- Spoon the lobster topping on top of each potato, sprinkle with more cheese, and serve immediately. For a little turf with your surf, sprinkle with a little cooked bacon.
