Everything starts in a wide pan with a generous drizzle of olive oil and a handful of sliced mushrooms. As they cook, they release their moisture and begin to caramelize, building a deep, savory base. Sergio’s Seasoning goes in early, coating each piece and creating that familiar, well-rounded flavor that anchors the dish.
As the mushrooms develop color, garlic and a pinch more Sergio’s are added, followed by fresh spinach that wilts down into the pan. The greens soften just enough, keeping their brightness while blending into the richness of the mushrooms. Table 40 comes in here, bringing whole herbs like oregano, thyme, and basil, along with a subtle tomato note that lifts everything and adds a fresh, garden-forward layer.
Cooked pasta is tossed directly into the pan, along with a splash of reserved pasta water and a knob of butter. Everything comes together into a light, glossy sauce that clings to each strand. A final sprinkle of Table 40 ties it all together, giving the dish a clean, herb-forward finish that feels right at home in spring.
It’s the kind of pasta that feels effortless but thoughtful. Light enough for warmer days, but still satisfying, with layers of flavor that build in a simple, repeatable way.
Ingredients
For the Mushroom & Spinach Pasta
- 12 oz pasta (linguine or fettuccine)
- 2 tbsp olive oil
- 1 tbsp butter
- 8 oz cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1–2 tsp Sergio’s Seasoning
- 1–2 tsp Table 40 Seasoning
- ½ cup reserved pasta water
- ¼ cup grated parmesan cheese
- Optional: squeeze of lemon
Directions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.
- Sauté the mushrooms: Heat olive oil in a large pan over medium-high heat. Add sliced mushrooms and cook for 5–7 minutes until browned. Season with Sergio’s Seasoning.
- Build the base: Add garlic and cook for 1 minute until fragrant. Stir in spinach and let it wilt down. Add Table 40 and mix to combine.
- Combine everything: Add cooked pasta directly to the pan along with butter and a splash of reserved pasta water. Toss until a light sauce forms and coats the pasta.
- Finish and serve: Remove from heat and stir in parmesan cheese. Taste and adjust seasoning if needed. Finish with a light sprinkle of Table 40 and an optional squeeze of lemon.
Serving Tips
- Let the mushrooms cook undisturbed: Giving them time to brown builds the depth of the dish.
- Save your pasta water: It helps create a smooth, glossy sauce that brings everything together.
- Finish with heat off: Adding cheese off heat keeps the sauce silky, not clumpy.
Why the Seasoning Matters
Sergio’s Seasoning builds the base, bringing out the natural savoriness of the mushrooms and tying the ingredients together from the start.
Table 40 adds the layer that makes it feel complete. Whole herbs and a subtle tomato note bring freshness and dimension, keeping the dish light while still full of flavor.
Together, they create a pasta that feels balanced and intentional, each layer building on the last.
A Spring Pasta, Done Right
At its core, this is a simple combination. Pasta, mushrooms, and greens.
But with the right layering, it becomes something more. The depth from the mushrooms, the freshness from the spinach, and the lift from the herbs make it feel perfectly in step with the season.
Easy enough for a weeknight, but polished enough to serve when you want something that feels just a little more special.
