Ingredients:

Dressing:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 shallot, (chopped)
  • 2 tablespoons Table 40 Seasoning
  • 1/4-1/2 tablespoons Sergio’s Seasoning

Salad:

  • 1 pound dry orzo
  • 2 cups cubed feta cheese
  • 2 cups cherry tomatoes, halved
  • 2 Persian cucumbers, chopped
  • 1 cup pitted Kalamata olives
  • 2 bell peppers, chopped
  • 1/4 cup pepperoncini, chopped
  • Optional fresh herbs for topping like basil, parsley, dill

Directions:

  1. For the dressing, combine all ingredients in a mason jar and shake well.
  2. Bring a pot of salted water to a boil and cook the orzo to al dente. Drain.
  3. Add the hot orzo to a salad bowl along with all other ingredients.
