Inspired by the recipe from @apartmentcook, the batter comes together in minutes — flour, beer, egg, Bowtie, and Sergio’s — and fries up golden and light around the fish. The salsa is fresh and simple: red onion, tomato, cilantro, cabbage, and lime, seasoned with Sergio’s and a crack of Pepper Mafia. The chipotle mayo ties it all together — creamy, smoky, and bright with lime and Sergio’s. Load it into a tortilla and don’t be shy with the toppings.

For the Beer Batter

For the Fish

  • White fish fillets, cut into taco-sized pieces
  • Oil, for frying

For the Veg Salsa

For the Chipotle Mayo

  • Mayonnaise, to taste
  • Chipotle pepper or chipotle sauce, to taste
  • Fresh lime juice, to taste
  • Sergio’s Seasoning, to taste

For Serving

  • Corn or flour tortillas
  • Guacamole (optional)

Directions

  1. Make the chipotle mayo: Combine mayonnaise, chipotle, lime juice, and Sergio’s Seasoning. Mix well and refrigerate until ready to serve.
  2. Make the veg salsa: Combine the red onion, tomato, cilantro, and cabbage. Squeeze in the lime juice and season with Sergio’s Seasoning and Pepper Mafia. Toss and set aside.
  3. Make the beer batter: In a bowl, combine the flour, beer, egg, Bowtie Seasoning, and Sergio’s Seasoning. Mix until the batter is fully combined and smooth.
  4. Fry the fish: Heat oil in a skillet or deep pan over medium-high heat. Dip the fish pieces into the batter, letting any excess drip off, then fry until golden and crispy. Drain on a paper towel.
  5. Assemble: Warm the tortillas. Add the battered fish, top with veg salsa, and drizzle generously with chipotle mayo and a dollop of guacamole.
