A well-marbled Wagyu strip needs a steady hand, not a crowded spice cabinet. In this recipe from @520grillersparadise, Sergio’s Seasoning is the only thing on the steak: a savory, balanced blend that seasons the surface and lets the beef’s buttery richness lead instead of competing with it. A gentle cook over indirect heat followed by a hot charcoal sear delivers a deep brown crust and a tender center, bringing the Golden Steer experience to your own grill.
Here's what you'll need:
Ingredients
- 1 boneless Wagyu New York strip steak, approximately 1 pound
- Sergio’s Seasoning, to taste
- Neutral high-heat oil, as needed (optional)
Directions
- Remove your Wagyu New York strip from its packaging and pat it completely dry with paper towels to help develop a better crust during the final sear.
- Season both sides and the edges of your steak generously with Sergio’s Seasoning to taste. Let your steak sit while you prepare the charcoal.
- Light your charcoal in a chimney starter. Once fully lit, arrange the coals on one side of your grill to create a hot direct-heat zone and a cooler indirect-heat zone. Bring the indirect side to approximately 225–250°F.
- Place your steak on the indirect side, away from the charcoal. Close your grill lid and cook slowly until the internal temperature reaches approximately 110–115°F for a medium-rare finish after searing.
- Move your steak directly over to the hot coals. Sear for approximately 60–90 seconds per side, flipping as needed, until a deep brown crust develops. Remove your steak at approximately 128–132°F for medium rare, or at your preferred internal temperature.
- Transfer your steak to a cutting board and let it rest for approximately 7–10 minutes.
- Slice your steak against the grain and serve immediately with your favorite side.
- Enjoy!
Pitmaster Tip
Keep your seasoning simple so the Wagyu’s marbling and richness remain the focus. Sergio’s Seasoning gives you that salt-and-pepper steakhouse flavor without overpowering your beef. Start with low heat, finish over hot charcoal, and give your steak a proper rest before slicing.
