Sergio's Seasoning Recipe: Golden Steer Tableside Caesar

This version builds the dressing the old way: in the bowl, by hand, layer by layer, with Sergio’s Seasoning doing the work that salt and pepper used to do. The result is a dressing with real backbone — anchovy depth, mustard emulsion, bright lemon, and a savory complexity that bottled dressing simply can’t touch. Finished tableside with a generous crack of Pepper Mafia over cold, crisp romaine, it’s the kind of salad that earns its place alongside a great steak — or holds its own as the main event.

Here’s what you’ll need:

Ingredients

For the Caesar Dressing

  • ½ bottle Dijon mustard
  • 1 tsp minced anchovies
  • 1 tsp fresh minced garlic
  • Sergio’s Seasoning, to taste
  • 1 egg yolk
  • Juice of 1 lemon (2 good squeezes)
  • Splash of red wine vinegar
  • 2 dashes hot sauce
  • 6 dashes Worcestershire sauce
  • Oil, added gradually to emulsify
  • ½ container grated Parmesan cheese

For the Salad

  • 1 head romaine lettuce, chopped
  • Remaining Parmesan cheese, to finish
  • Homemade or store-bought croutons
  • Pepper Mafia Seasoning, to finish

Directions

  1. Build the dressing base: In a large mixing bowl, add the Dijon mustard, minced anchovies, minced garlic, and Sergio’s Seasoning. Stir to combine.
  2. Add the egg yolk: Separate the egg and add only the yolk to the bowl. Mix it into the base.
  3. Add the acid: Squeeze in the lemon juice, then add a splash of red wine vinegar, the hot sauce, and the Worcestershire sauce. Whisk to combine.
  4. Emulsify: Slowly drizzle in the oil while whisking continuously until the dressing comes together and coats the back of a spoon.
  5. Add the Parmesan: Fold in half the Parmesan cheese and stir until incorporated.
  6. Prep the romaine: Take a head of romaine, chop off the base end, and cut into pieces.
  7. Dress the salad: Add the chopped romaine directly into the bowl with the dressing. Using two large spoons, toss until every leaf is completely coated.
  8. Finish: Add the croutons and remaining Parmesan. Give a final toss.
  9. Serve: Plate and finish with a generous sprinkle of Pepper Mafia Seasoning over the top.
