Sergio's Seasoning Recipe: One-Pan Steak & Charred Asparagus

A great steak dinner doesn’t need multiple pans or a long list of steps to feel complete. It comes down to a few key elements, cooked the right way, with flavors that build as they go.

This version keeps things simple by bringing everything into one pan. The steak sets the tone, seared over high heat and seasoned with Sergio’s Seasoning to create that clean, savory base that carries through the entire dish. As it cooks, mushrooms and asparagus are added directly to the same pan, picking up all the flavor left behind.

The mushrooms soften and absorb that richness, while the asparagus chars and adds a little contrast to the plate. Right at the end, Maitre d’ Butter is spooned over the steak, melting into everything and tying it all together.

It’s the kind of meal that feels thought through without creating a sink full of dishes. Once you start cooking this way, it’s hard to go back.

Ingredients

For the One-Pan Steak, Mushrooms & Charred Asparagus

  • 1–2 USDA Prime steaks (Ribeye or NY strip)
  • 1–2 tbsp olive oil
  • 1–2 tsp Sergio’s Seasoning
  • 1 tbsp Maitre d’ Butter
  • 1 cup mushrooms (cremini or button), halved
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil (for vegetables)
  • Pinch of Sergio’s Seasoning

Directions

  1. Prep the steak: Pat the steaks dry and coat lightly with olive oil. Season generously with Sergio’s Seasoning on all sides.
  2. Sear for crust: Heat a large skillet over medium-high heat. Add a small amount of oil, then place the steaks in the pan. Sear for 2–3 minutes per side until a deep crust forms. Remove and set aside.
  3. Cook the vegetables: In the same pan, add mushrooms and asparagus. Toss with a bit of olive oil and a pinch of Sergio’s. Let the mushrooms soften and the asparagus char, stirring occasionally, about 5–7 minutes.
  4. Bring it together: Push the vegetables to one side and return the steaks to the pan. Add Maitre d’ Butter and let it melt. Spoon the butter over the steaks as it foams, coating both the meat and vegetables.
  5. Finish cooking: Continue cooking to your desired doneness, flipping as needed. Once done, remove from heat and let the steaks rest for 5 minutes.
  6. Serve: Slice the steak and plate alongside the mushrooms and asparagus. Spoon any remaining butter and pan juices over the top.

Serving Tips

  • Use one large pan: Give everything enough space to sear and char properly without steaming.
  • Let the vegetables pick up the flavor: Cooking them in the same pan as the steak is where a lot of the depth comes from.
  • Rest before slicing: This keeps the steak juicy and lets everything settle before serving.

Why the Seasoning Matters

Sergio’s Seasoning does the heavy lifting from the start. It builds a consistent, savory base that enhances the steak as it sears and carries through to the vegetables as they cook in the same pan.

Maitre d’ Butter finishes the dish in a way that feels complete. As it melts, it blends garlic, herbs, and richness into every component, coating the steak and soaking into the mushrooms and asparagus.

Together, they create a balance that feels intentional without adding extra steps.

A One-Pan Meal That Works

At its core, this is as straightforward as it gets. Steak, vegetables, and a single pan.

But when everything cooks together and the flavors build in layers, it turns into something more. The seared crust, the softened mushrooms, the charred asparagus, all brought together with a simple finish.

Easy to make, easy to clean up, and the kind of meal you’ll come back to when you want something reliable that still feels done right.
